NMF Mother's Day Brunch
May 18th, 2008

At this special event, we celebrated the women in our lives!
Members also learned how to make decorative sugar cookies.
A good time was had by all!

Members decorated and took home a cookie made by Judi.



Requested Recipes from the brunch:

Maria's Cinnamon Fungi's
1 loaf of white wonder bread (cut off crusts)
Mix: 1 8oz. cream cheese (softened)
1/4 cup sugar
1 egg yolk

Spread cream cheese mixture on bread.
Roll up.
Dip in a bowl of melted butter
Roll Fungi in a bowl with cinnamon and sugar mixed

Freeze immediately on cookie sheets.
When froze, place in freezer bags.
Remove from freezer when ready to cook.
Bake at 350 10-15 minutes.

Judi's Cookie Demonstration....

Mary's Sugar Cookies:
1 1/2 cups sifted confectioners sugar1 cup margarine1 egg (whisked)1 teaspoon vanilla1/2 teaspoon almond extract2 1/2 cups flour1 teaspoon baking soda1 teaspoon cream of tartar
Mix together well and make a ball…
Refrigerate for at least 4-5 hrs...overnight is best.When ready...roll it out.
Cut it out and place on greased cookie sheets.
Bake at 375 for about 7-8 minutes.
They will NOT brown on the top so they may not looked done.

Royal Frosting:
2 egg whites3 cups confectioners sugar1 tablespoon lemon juice1/4 teaspoon salt
Combine egg whites, sugar, lemon juice and salt in a mixing bowl. Beat at high speed for several minutes until the mixture holds a soft peak.

I really enjoyed sharing this with my Mom! She thinks this is a really great group and wishes this was around in her earlier Mommy years:-) Maybe we should start a grandma club!
